Straight answers

Will it stay sharp, or is that just marketing?
The core is hardened to 60 to 62 HRC. In practice that means the edge lasts months of daily cooking rather than weeks. It will still dull eventually. Every knife does. That is why the stone comes with the set rather than sold to you later.
I have never used a whetstone. Will I ruin it?
Not permanently. The worst a beginner does is round the bevel, and a few extra passes on the coarse side of the stone bring it back. The sharpening guide that comes with every set takes you through the whole process step by step.
What does the 100-day trial actually allow?
Cooking. Daily use. The trial means cooking with the knife, not keeping it boxed. Email support@kanzokitchen.co.uk within 100 days of delivery and we arrange the return.
What if a fault shows up after the trial?
Then the guarantee against manufacturing defects applies. Email support@kanzokitchen.co.uk and we sort it out. It covers faults in materials and craftsmanship, not chips from bones, frozen food or the dishwasher.
Which set should I get if I only cook a few times a week?
The One. A chef knife covers most of what happens on a board. One of our own customers puts it at around 80% of their cooking. If you add more knives later, you will already have learned to sharpen them.
How do I know this is real Damascus and not etched?
On a Kanzo blade the pattern is the boundary between 67 forged layers, so it runs through the steel rather than sitting on the surface. A printed pattern comes off the face of a blade under abrasive; a forged one cannot, because there is nothing to rub off. It is also why every Kanzo blade looks slightly different.
Is it dishwasher safe?
No, and neither is any knife with a wooden handle and a hardened edge. Rinse, dry, done. Ten seconds. A drop of food-safe mineral or linseed oil on the rosewood twice a year keeps it from drying out.
Will it rust?
The steel is stainless, so day-to-day cooking will not stain or rust it. What it does not like is sitting in water. Rinse it, dry it, and the blade stays bright.
Which chopping board should I use?
Wood or rubber. Glass, stone, ceramic and metal boards blunt any edge quickly. The same goes for bones and frozen food: this is a slicing knife, not a cleaver.
Can I buy a single knife rather than a set?
Yes. Every knife is available individually at kanzokitchen.co.uk. The sets exist because the stone and the guide belong with your first knife, and the price per knife drops as the set grows.

The 15° edge is ground on both sides and the handle is symmetrical. No separate version needed.
How fast is delivery, and is there an age check?
Every order is shipped from a UK warehouse. Most orders arrive within 2–4 working days with tracking. Knives are sold to over-18s only and your age is verified by the courier on delivery, so someone over 18 needs to be there to sign.
Can you send it straight to the person I am buying it for?
