Product
Damascus steel is known for its layered construction and distinctive wave-like pattern on the blade.
Our knives use 67-layer Damascus steel, combining strength, edge retention and corrosion resistance. This structure helps the blade stay sharp longer while maintaining durability for everyday kitchen use.
Yes. Our knives are designed to deliver the balance, sharpness and durability expected from high-quality kitchen tools used by both serious home cooks and professional chefs.
No. The Damascus pattern is created through layering different steels during forging, meaning the pattern is part of the blade itself rather than a surface coating.
Knife Care
Simply wash your knife using warm water and mild dish soap, then dry it immediately with a towel.
We recommend hand washing only. Please find out Kanzo care guide here
No. Dishwashers expose knives to high heat, moisture and harsh detergents that can damage the blade and handle.
Always wash and dry your knife by hand.
For best edge retention, use:
• Wooden cutting boards
• Rubber cutting boards
Avoid cutting on glass, stone, ceramic or metal surfaces, as these can quickly dull the blade.
Kitchen knives are designed for precision slicing.
Avoid cutting:
• Frozen foods
• Bones
• Hard shells
• Very hard foods like frozen meat or ice
Using the knife for these tasks can damage the blade edge.
To protect the blade and maintain sharpness, store your knife using:
• A knife block
• Magnetic knife strip
• Blade guard
Avoid storing knives loosely in drawers.
Sharpening
For regular home cooking, most knives benefit from sharpening every 3–6 months.
You can maintain the edge between sharpenings using our whetstone.
Yes. Many people sharpen their knives using:
• Whetstones
• Professional sharpening services
If you are unsure, we recommend having the knife sharpened by a professional.
