What is a Santoku actually for?
Nearly everything. It is the Japanese all-rounder: vegetables, meat off the bone, fish, herbs, with a wide blade that doubles as a scoop for whatever you have just cut. What it is not for: bones, frozen food and crusty loaves. Those want a cleaver or a bread knife, not a fine edge.
Santoku or chef knife, which one do I want?
Both are all-rounders, so the honest answer is preference. The Santoku is a touch shorter with a flatter edge, brilliant for clean, straight chopping and smaller hands. A chef knife has more belly for rocking cuts. If most of your prep is vegetables and slicing, the Santoku is on this page for a reason.
Will it stay sharp, or is that just marketing?
The core is hardened to 60 to 62 HRC, which in plain English means the edge holds for months of daily cooking rather than weeks. It will still dull eventually. Every knife does. Ten passes a side on a whetstone bring it back, and if it fades inside the first year, the sharpness guarantee means we sharpen it for you, free.
How do I sharpen it when the time comes?
Two options. Do it yourself with any standard whetstone: soak the stone, hold the angle, ten passes a side, coarse then fine. How does the 365-day sharpness guarantee work?
If the edge fades at any point in your first year, email support@kanzokitchen.co.uk and we arrange the sharpening, free. No forms, no quibbling about how much you cooked. A knife this sharp should stay that way, and that is on us.
What does the 100-day trial actually allow?
Cooking. Daily use. The trial means cooking with the knife, not keeping it boxed for a hundred days. If it is not the best knife you own, email support@kanzokitchen.co.uk within 100 days of delivery and we arrange and pay for the return.
What if a fault shows up after the trial?
Then the guarantee against manufacturing defects takes over. Email support@kanzokitchen.co.uk and we sort it out. It covers faults in materials and craftsmanship. It does not cover chips from bones, frozen food or the dishwasher, because nothing covers those.
How do I know this is real Damascus and not etched?
On a Kanzo blade the pattern is the boundary between 67 forged layers, so it runs through the steel rather than sitting on the surface. An etched or printed pattern comes off the face of a blade under abrasive. A forged one cannot, because there is nothing to rub off. It is also why no two Kanzo blades look the same.
Is it dishwasher safe?
No, and neither is any knife with a wooden handle and a hardened edge. Rinse, dry, done: ten seconds. A drop of food-safe mineral or linseed oil on the rosewood twice a year keeps it looking new.
Will it rust?
The steel is stainless, so everyday cooking will not stain or rust it. What it does not like is sitting in water. Rinse it, dry it, and the blade stays bright.
Which chopping board should I use?
Wood or rubber. Glass, stone, ceramic and metal boards blunt any edge fast. The same goes for bones and frozen food: this is a slicing knife, not a cleaver.
I am left-handed.
Perfect, so is the knife. The 15° edge is ground evenly on both sides and the handle is symmetrical, so it works identically in either hand.
How fast is delivery, and is there an age check?
