What is a Santoku actually for?
Nearly everything. It is the Japanese all-rounder: vegetables, meat off the bone, fish, herbs, with a wide blade that doubles as a scoop for whatever you have just cut. What it is not for: bones, frozen food and crusty loaves. Those want a cleaver or a bread knife, not a fine edge.
And the utility knife?
It sits between a paring knife and a full-size blade, and once you own one it rarely goes back in the drawer. Trimming fat off a chicken thigh, halving tomatoes, coring peppers, splitting a bagel: the small, quick cuts that make up half of everyday cooking. Will they stay sharp, or is that just marketing?
Both blades have a hardened high-carbon core, the Santoku’s to 60 to 62 HRC, which in plain English means the edges hold for months of daily cooking rather than weeks. How do I sharpen them when the time comes?
Two options. Do it yourself with any standard whetstone: soak the stone, hold the angle, ten passes a side, coarse then fine. How do I know this is real Damascus and not etched?
On a Kanzo blade the pattern is the boundary between 67 forged layers, so it runs through the steel rather than sitting on the surface. An etched or printed pattern comes off the face of a blade under abrasive. A forged one cannot, because there is nothing to rub off. It is also why no two Kanzo blades look the same.
I am left-handed.
Perfect, so are both knives. The 15° edges are ground evenly on both sides and the handles are symmetrical, so they work identically in either hand.

Care

How do I look after them?
Hand wash only: no knife with a wooden handle and a hardened edge belongs in a dishwasher. Rinse, dry, done, ten seconds. The steel is stainless, so everyday cooking will not stain or rust it, but do not leave it sitting in water. Cut on wood or rubber; glass, stone, ceramic and metal boards blunt any edge fast, and so do bones and frozen food. A drop of food-safe mineral or linseed oil on the rosewood twice a year keeps it looking new.
