A blunt ordinary knife with crushed tomatoes next to the Kanzo Santoku with clean, even tomato slices

Did you know most kitchen knives start going blunt within a few dozen dinners?

No wonder so many knives press instead of cut. The tomato squashes before it splits, and your wrist ends up doing the work the edge should.

Our 67-layer Damascus steel puts a stop to that: the layered structure gives the blade extreme hardness and lasting sharpness.

Combined with the 15° precision edge, finished by hand on both sides of both blades, it glides through whatever you put in front of it. Precise, clean, effortless.

That is when cooking starts being fun again.

And right now the edge comes twice over: the Santoku at £129, the £89 utility knife free.

See for yourself

Razor sharp. And it arrives that way.

This is the Santoku exactly as it leaves the box. A ripe tomato, the thing that shows up a blunt knife fastest, taken down in thin, even slices. No pressing, no sawing, just the weight of the blade.

That edge is no accident. 67 layers of Damascus steel, ground to 15° by hand, stay sharp through months of daily cooking. The utility knife gets the same steel and the same edge. And when either finally fades, ten passes on a whetstone bring it straight back.

The Santoku: 18 cm blade · 31.3 cm overall · 240 g
The utility knife: 13.3 cm blade · 25.8 cm overall · 115 g

The Kanzo utility knife on a chopping board next to sliced ginger, with icons for meat, vegetables, fruit, fish and cheese

Why this pair

One for the board. One for everything else.

Santoku translates as ‘three virtues’: slicing, dicing and mincing, which covers most of what dinner asks of you. The wide blade keeps your knuckles off the board and doubles as a scoop, the flatter edge takes clean, full slices, and the hollows along the steel stop wet food clinging to the blade.

The utility knife covers the jobs a big blade is too much for. It sits between a paring knife and a full-size blade: trimming fat, halving tomatoes, coring peppers, the small quick cuts you do standing at the counter, not the board.

Two knives, most jobs, no drawer full of compromises.

From Halloween suppers to Christmas, the boxes are half the present

As easy to give as it is to keep

Open a presentation box and you see why our reviews mention the unboxing almost as often as the balance. Each knife sits ready in its lining, with the microfibre cloth and its certification card beside it. No wrapping paper, no fuss, just hand them over.

Wedding, new home, or the cook who has everything except knives this good: enter their address at checkout and the set arrives at their door, gift-ready. Two boxes also means you can split them: the Santoku for the serious cook, the utility knife for the student kitchen. One thing to know: knives are age-verified on delivery, so someone over 18 needs to sign.

And few gifts come with a promise attached. The 100-day Kitchen Trial travels with them: they cook, and if these are not the best knives they own, we take them back.

FAQ

Straight answers

The offer

How is the utility knife free?

Simple maths. The Premium Santoku Knife Rosewood is £129 at kanzokitchen.co.uk and the Premium Utility Knife Rosewood is £89. On this page you pay £129 for the Santoku and the utility knife comes with it at no charge: two knives worth £218 for £129, so you save £89. Same knives, same gift boxes, same 100-day Kitchen Trial on both.

Can I buy the utility knife on its own?

Yes, it is £89 on its own at kanzokitchen.co.uk. On this page it comes free with the Santoku, which is why the set is the better way to get it.

Why a set instead of one knife?

Because one blade never does everything comfortably. The Santoku is the board knife: slicing, dicing, mincing. The utility knife is the counter knife: trimming, halving, coring, the quick jobs where a big blade is a nuisance. Together they cover most of what you cook, and on this page the second one costs you nothing.

The knives

What is a Santoku actually for?

Nearly everything. It is the Japanese all-rounder: vegetables, meat off the bone, fish, herbs, with a wide blade that doubles as a scoop for whatever you have just cut. What it is not for: bones, frozen food and crusty loaves. Those want a cleaver or a bread knife, not a fine edge.

And the utility knife?

It sits between a paring knife and a full-size blade, and once you own one it rarely goes back in the drawer. Trimming fat off a chicken thigh, halving tomatoes, coring peppers, splitting a bagel: the small, quick cuts that make up half of everyday cooking. Same Damascus steel, same rosewood handle, same 15° hand-finished edge as the Santoku.

Will they stay sharp, or is that just marketing?

Both blades have a hardened high-carbon core, the Santoku’s to 60 to 62 HRC, which in plain English means the edges hold for months of daily cooking rather than weeks. They will still dull eventually. Every knife does. Ten passes a side on a whetstone bring an edge back, and if it fades inside the first year, the 365-day sharpness guarantee means we sharpen it for you, free.

How do I sharpen them when the time comes?

Two options. Do it yourself with any standard whetstone: soak the stone, hold the angle, ten passes a side, coarse then fine. Twice a year is plenty in a home kitchen, and the step-by-step method is in the care guide at kanzokitchen.co.uk. Or let us handle it: in the first year the 365-day sharpness guarantee covers you.

How do I know this is real Damascus and not etched?

On a Kanzo blade the pattern is the boundary between 67 forged layers, so it runs through the steel rather than sitting on the surface. An etched or printed pattern comes off the face of a blade under abrasive. A forged one cannot, because there is nothing to rub off. It is also why no two Kanzo blades look the same.

I am left-handed.

Perfect, so are both knives. The 15° edges are ground evenly on both sides and the handles are symmetrical, so they work identically in either hand.

Care

How do I look after them?

Hand wash only: no knife with a wooden handle and a hardened edge belongs in a dishwasher. Rinse, dry, done, ten seconds. The steel is stainless, so everyday cooking will not stain or rust it, but do not leave it sitting in water. Cut on wood or rubber; glass, stone, ceramic and metal boards blunt any edge fast, and so do bones and frozen food. A drop of food-safe mineral or linseed oil on the rosewood twice a year keeps it looking new.

Delivery, trial and guarantees

What does the 100-day Kitchen Trial actually allow, and what if a fault shows up later?

Cooking. Daily use. The trial means cooking with the knives, not keeping them boxed for a hundred days. If they are not the best knives you own, email support@kanzokitchen.co.uk within 100 days of delivery and we arrange and pay for the return. After that, the guarantee against manufacturing defects takes over: faults in materials and craftsmanship are on us. Chips from bones, frozen food or the dishwasher are not, because nothing covers those.

How does the 365-day sharpness guarantee work?

If either edge fades at any point in your first year, email support@kanzokitchen.co.uk and we arrange the sharpening, free. No forms, no quibbling about how much you cooked. Knives this sharp should stay that way, and that is on us.

How fast is delivery, is there an age check, and can you send it as a gift?

Every order is shipped from a UK warehouse within 24 hours, and most arrive within 2–4 working days with tracking. Knives are sold to over-18s only and age is verified by the courier at the door, so someone over 18 needs to be there to sign. Buying it as a present? Enter their address at checkout and the set arrives gift-ready, each knife in its own presentation box, no wrapping needed. The same age rule applies at their door.
